I feel like I need to do a thoughts on Tuesday post because I have so much randomly floating through my head and I probably won't remember half of it by the time Thursday roles around!
I'm sure most of you have seen the new Cambell's campaign, advertising the cook with cambell's website. C and I have been diligently trying to eat at home because a) we don't have the money to eat out every night and b) this wedding is approaching quickly and I would really like to still fit into that dress I just bought in 15 months time. This means that I need to pull my weight in the cooking department as a lot of the time I'm home first and can have dinner finished by the time C walks in the door.
Enter cook with Cambell's. I've said this on here before and I'm sure I will say it again. I. don't. cook. C, on the other hand, is amazing in the kitchen. The boy can seriously look at a recipe, look at what we happen to have in the pantry at the time and wing it, and it always turns out perfectly. When I cook, it isn't like that. I need guidelines and directions, so naturally, any recipe that promises both quick and easy has my undivided attention.
So far, I have successfully made two recipe's from this site, both of which C and I loved, and both of which honestly didn't require a whole lot of effort on my part. LOVE.
I'm going to share my favourite of the two recipe's so far, and I will continue to share the ones that I especially like in the future.
2 Step Tomato Chicken Mozzarella
Ingredients

1 tbsp (15 mL) vegetable oil

4 (about 1 lb/500 g) boneless, skinless chicken breasts

1 can CAMPBELL'S® Condensed Tomato Soup

-
1 tsp (5 mL) dried oregano leaves, crushed

1/2 cup (125 mL) shredded Mozzarella cheese

Directions
- 1. Brown chicken well in heated oil at medium-high heat in large skillet.
- 2. Add 1 can Campbell's® Condensed Tomato Soup mixed with dried oregano leaves, crushed. Simmer, covered, until chicken is cooked through. Sprinkle with Mozzarella cheese.
